I don't think I've been to a baker that bakes and works the shop. When does he sleep usually?

Normaly they sleep from late noon, most bakerys i know are only open to 2 or 3 pm.

probably he works 3 AM to 2 PM, has someone else at afternoon and night night to sell items and continue the baking of 'Already prepared dough" than said person closes at 10 or 11 PM, than someone else comes at 3 to prepare dough

In Paris, a lot of places are now buying pre-made dough. Pop it in the oven, and you're done. It's become a bit of a scandal.

should not be too much of a scandal as long as the people sending pre-made dough do it at best hours before (as they basically concentrate in just doing dough and not baking it most of the day) and at worse the day before

It works for convenience store openers too.
Lavali makes a good point although I do sympathize if Sandra finds herself in situations where she is being told two different things at once which seems to be the case in the last strip. Of course in situations like that I would simply defer to Zoe seeing as how she outranks Tatiana and if she complains remind her who actually runs the agency.

Considering the living arrangements Zoe made for Tatiana and Sandra's apartment I disagree. While it was Domenico's idea that Tatiana stay with Sandra, Zoe did not object and I think it was her own way of silently communicating her displeasure in her attempts to sabotage Sandra.

The question was who runs the agency - to which the answer is (to me, rather obviously) "Tatiana". She does so as Domenico's willing slave, so he kind of rules it, but it's clear the organisation depends on her. Domenico is far too flaky to run an office, while Zoé might have the brains and common sense but would consider all the trivial tasks to be beneath her, and so delegates.
And I disagree that Zoé agreed to the flatshare scheme as a punishment for Tatiana's sabotage attempts. If she thought that those were a significant problem, she'd hardly be giving Tatiana further opportunities to cause trouble. I bet she just finds Tatiana a bit annoying generally, especially if she's noticed her making eyes at Domenico, and so was happy to throw ger into the toughen-up-Sandra scheme.
