3 AM? He isn't doing much business or doesn't make much that isn't pulled out of a freezer. If you don't start before midnight, you aren't doing much business, you're not doing it right, or both.

Depends if he has aides or not. He seems a bit young for that, but he also seems a bit young for having his own shop (unless he particularly shined at baking during his training, in which case he would have no trouble to get a loan from a bank - maybe even a nudge from his former apprenticeship master). Bakery is a complicated matter, and maybe GiD don't handle all the implications quite right.

I commend anyone who looked further into the matter, by the way. To us French, bakery is really really serious business.
