Presumably, if Angel claimed that Erik was gay, Erik would verbally object, since he clearly isn't (having been in a relationship with Zii). Angel is trying to imply that Erik is interested in him (and thus Jerzey should either be jealous, interested in Erik, or both). Angel has consistently been referred to as "he," and even if he is a transman, it would be disrespectful to say that he's a woman. I doubt that he is, though, he seems like he's being portrayed as an androgynous goth/emo guy, not as feminine per se.

I know he's listed as straight in the Menage cast stats; but don't you have to be even slightly bi in order to be comfortable being involved in a mmf threesome? (as he had been with Zii and Andre?)

Guys can do stuff to the same girl without touching each other. It doesn't imply that they're bi, IMO, any more than two women getting involved with the same guy but not each other.
