So now Lori is just as bad as they are, everyone's happy now she is a psycho heretic as well.
So I'm guessing the back is not a weak point any more. Also you can't be a man of the cloth and hold a title as well.
Killing someone who killed your friend is generally more morally acceptable(though by no means good), than killing someone because they'e a different race(so to speak).
And as stated, she's enraged. You'd be surprised how much pain you can ignore if you're absolutely pissed. It's pretty neat actually just how much of an effect anger can have on someone.
Sparking now, search within your soul to find the answer! Push yourself to the edge, give 1000%!

It's more likely he's making it up as he goes along and has no plan.
Just seat of the pants webcomic making.
With no real idea of a plot, just throwing out random things that just happen.
I plotted the major beats of the story out before I started writing this final storyline.
The thing to keep in mind is that the story is largely locked into events that are directly impacting Katie/Leonard/Suki as they experience them. There are a handful of before or after scenes here and there, but by and large, it's intentionally being written from the perspective of Katie/Leonard/Suki being dropped into these time periods with no idea what's going to happen or has happened up to that point.

Love him or hate him, the man stuck to his guns and didn't whine about the consequences of his actions.

Like others have been saying, Lori's probably powering through the pain because she's in hyper-rage.
Maybe Jebediah Winters was a Baron first and became a man of the cloth later in life, for instance after the death of his wife, and people still call him 'Baron' in stressful situations because they're used to doing so? Or maybe in this country - wherever it is - being a titled noble and a priest at the same time is allowed? *shrug*
Oh, hey...! Just thought of something.
The VC-verse overlaps at least partially with the EC-verse, right? In the EC-verse, the Hunters have a skeined view of vampires and other cryptids, but they do at least know a little bit about them. If they have access to any information at all about the rampage of the Unholy Queen (whole villages murdered, princesses turned into slaves, etc.), it wouldn't be all that surprising if a member of a Hunter line (ie., Baron Winters) would react badly if a vampire like Lori popped up in his domain.
Remember, junior vampires tend to be a bit clumsy about covering their tracks, and Lori tends to turn people and form vampire covens. The events of her turning take place in the past, so closer to the time of the Unholy Queen. Yeah, I could see a Hunter having rather strong feelings about that...
Well, I guess the real hero of the story is dead now. Fare Thee Well Baron Winters, your saga had a tragic but noble end. Your children and your childrens children will sing songs of your bravery forevermore!
And this is when Lori learned her love of neck snapping....
BTW Garlic has never been established to do jack shit. Not even in EC universe.
Also... Heresy
Yea using the sermon about ignoring others in need as a curse for a vampire begging for her life is pretty dam bad. If there would standards, that should count as such.
