It's a bit of both. If it impacts the plot, then it's definitely planned out in advance.

There's also a great deal of variation among normal humans in the sense of smell. In one version of blind man's buff 'It' has to identify the person tagged by feeling their face. Only if the person tagged is correctly identified do they become 'It'. I recall reading one person's recollection of 'not getting' the game (in particular, the use of the blindfold) since they could always identify the person they had tagged by smell. (Of course dogs and cats can do this routinely, but most humans can't.)
